Cherry Strudel

Remember the leftover cherries from the cherry pie? Well I used the rest to make this baby.

I was in Perth two years ago and a friend recommended this place for apple strudel. I believe it’s called Corica Pastries. If you Google it, there are plenty of blogs that has raved about it. I’ve heard people buying boxes of it back to their home countries, because it’s really THAT good. So if you happen to be in Western Australia, don’t forget to pop by Corica – you’re in for a gastronomical paradise.

Anyway, I also had leftover puff pastry in the freezer and I put two and two together and Voila! Cherry strudel! It’s a really simple dessert to make and a guaranteed crowd pleaser.

Cherry Strudel

  • 1 puff pastry sheet
  • 2 tbsp icing sugar
  • 1 egg yolk
  • 200ml thickened cream
  • 1 cup cherries
  • 2 tbsp caster sugar
  • 1 tbsp plain flour
  • 2 tsp ground cinnamon
  • brown sugar to sprinkle

Method:

  1. Preheat the oven to 180C
  2. Cut the puff pastry into half.
  3. Brush some egg yolk on it.
  4. Sprinkle some brown sugar and place it in the oven for 20 minutes or until pastry is golden and fluffy.
  5. Set aside and let it cool.
  6. Mix cherries, caster sugar, flour and cinnamon together.
  7. Whip cream until light and fluffy.
  8. Assemble strudel together first by putting cream on one pastry, then the cherry mixture and finally top it with the second pastry sheet.
  • Decorate with lots and lots and lots of icing sugar. Refrigerate for at least 30 minutes.

    1. Okay, Chocolate Lovers out there; listen up! Do I have a recipe for you! This great old recipe is from the folks at Hershey’s Chocolate. Chocolate and cherries just seem to go together and this recipe is more proof of that. When you serve these tasty squares to your friends, be sure to have a copy of the recipe handy. They are sure to ask for it. Or you can be secretive, if you want, and tell them it’s one of your vintage recipes that you just don’t share. But be warned, they will be expecting you to make them anytime you get together.
